paleo chocolate pudding: almost whole30, entirely yummy

did you know there’s an entire day dedicated to all things dessert?? true story. it’s national dessert day, annnnd it just so happens to be today (you’re welcome). and with september whole30 (er, 90) behind us, the timing couldn’t be more perfect! with one small caveat: our chief fitlosopher is still mid-reintroduction-phase. if you’ve never done whole30, we know what you’re thinking: umm, what does that mean? it’s simple. the reintroduction phase is the 2-week period after your 4-week whole30 (which is why our 6-week fitbook lite is the ultimate whole30 wingman, but we digress) in which you slowly + purposefully reintroduce some whole30-forbidden foods back into your diet. if you rush it by chowing down on a giant, saccharine-sweet, frosting-smothered cupcake on day 31, your detoxified digestive tract will most likely go haywire. by welcoming back those off-limits items one at a time, you can ensure a churn-free reintroduction.

so how are we celebrating national dessert day during whole30 reintroduction?? we thought you’d never ask! not only is this chocolate pudding vegan, refined-sugar-free + loaded with healthy fats, it’s only packin’ one non-whole30-compliant ingredient (maple syrup), making it absolutely perfect for reintroduction. sounds like a pretty sweet deal to us!  

[paleo chocolate pudding]
serves 1-2

½ an avocado
2 medjool dates
2 tsp maple syrup
½ cup coconut milk
¼ cup cacao powder
½ tsp espresso powder
1 tsp vanilla-bean powder

directions: in a mini food processor or blender, blend everything together until smooth, then top with your favorite fruit.
