like your pumpkin-spice paleo? try these whoopie pies.

funny thing about pumpkin: people either LOOOVE it (like, y'all...#pumpkineverything) - or ew, they hate it. we at fitlosophy tend to fall face first into the first camp, so once fall hits...pumpkin-spice overload is ON. there’s a reason pumpkin is everywhere. obviously, ‘tis the season, but beyond that, is there a more delish way to turn a nutrient-loaded veggie into a delectable dessert?? we think not! after all, these glorious orange orbs are loaded with beta-carotene, which converts to vitamin A in the body - great news for anyone who wouldn’t mind having glowing skin, sharp eyesight, and a robust immune system. it’s also a highly effective anti-inflammatory and an excellent source of potassium, helping to prevent chronic illness and keep your muscles + ticker performing their best. so what are you waiting for??

our favorite health(ier) fall indulgence just so happens to be refined-sugar, gluten + dairy-free - not to mention paleo.
you’ve never had pumpkin-spice quite like this!  can we get a woo-hoo for our 
paleo pumpkin spice whoopie pies? try these little perfectly-portioned pumpkin treats on for size.

[pumpkin spice whoopie pies]

makes 6 pies

wet ingredients:
½ cup pumpkin puree
½ cup cashew butter
½ cup coconut sugar
2 tbsp coconut oil
1 egg
1 tbsp vanilla extract

dry ingredients:
1 cup almond flour
1 ½ cups unsweetened desiccated coconut
1 tsp baking soda
1 tsp cinnamon
1 tsp pumpkin pie spice
¼ tsp sea salt

1 cup coconut cream, chilled
1/2 tsp vanilla bean powder
1/2 tsp cinnamon
2 tsp maple syrup
pinch of sea salt

  1. mix all wet ingredients until fully combined, then mix in all dry ingredients. refrigerate dough for at least a couple hours.
  2. form dough into 12 large balls + put on a parchment-lined baking sheet, then flatten into cookie shapes with your palm.
  3. bake at 350 for about 12 minutes, then cool completely.
  4. whip the coconut cream with the vanilla bean, cinnamon, maple syrup + sea salt, then sandwich a dollop between two cookies to make a pie!
