summer is just about here, which means that the thought of standing over a hot stove all day long isn’t exactly the most appealing prospect to entertain. we might even try to outwit the summer heat by serving up solely no-bake fare, but after a few days of smoothies, sandwiches + cold salads, we always start jonesing for a hot meal. this is where the grill is a godsend. all your cooking can be done poolside, and you won’t be stuck inside baking in a hot kitchen. we're totally fan-grilling over these 4 recipes that will have you cooking over coals from brunch 'til lunch - dessert included!


breakfast:
[grilled breakfast tacos] makes 3 tacos

1 bell pepper, cut into 4 large pieces.
avocado oil spray
sea salt + pepper
3 slices bacon
3 eggs, beaten
3 corn tortillas
½ cup shredded raw cheddar cheese
¼ cup salsa
½ avocado, mashed
cilantro for garnish

  1. spray bell pepper pieces with avocado oil + season with sea salt + pepper. grill a few minutes per side, remove to let cool + cut into thin slices.
  2. lay bacon on a small baking sheet + place baking sheet on hot grill. at the same time, place an oven-safe skillet with a drizzle of avocado oil or ghee inside on the grill to heat up. cook bacon a few minutes, until browning, flip + cook a couple minutes more. remove from grill, drain, cool, + chop.
  3. while the bacon is finishing up, pour the eggs into the hot skillet + scramble them until cooked to your liking. remove skillet from grill.
  4. toss the tortillas on the grill, sprinkle cheese on top of each, add scrambled eggs to each, then fold in half, grilling a couple minutes on both sides of the tacos.
  5. top tacos with bell pepper, bacon, salsa, avocado + cilantro. serve ‘em up!


lunch:
[grilled greek panzanella salad] makes 2 servings

1 pita
1 zucchini, sliced into rounds
1 bell pepper, cut into four pieces
½ a red onion, cut into ½-inch rounds
8 asparagus stalks, ends trimmed
avocado oil spray
sea salt + pepper
1 cucumber, chopped
¼ cup feta crumbles
3 tbsp olive oil
1 tbsp balsamic vinegar

  1. spray pita with avocado oil spray + grill a few minutes per side. remove from grill + chop into “croutons.”
  2. spray zucchini, bell pepper, red onion + asparagus with avocado oil spray + season with salt + pepper, then grill a few minutes per side. remove from grill + cut everything into bite-sized pieces.
  3. whisk together olive oil + vinegar + a pinch of sea salt + a couple grinds of pepper, then toss with the pita croutons + all the veggies.
  4. top with feta + serve!


dinner:
[lettuce-wrapped sliders + grilled sweet potato fries] makes 4 servings

1 lb grass-fed ground beef or bison
1 small zucchini, grated + excess water squeezed out
3 tbsp olive oil
1 tbsp worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
couple pinches of sea salt
couple grinds of pepper
head of iceberg lettuce
1 tomato, cut into slices

2 sweet potatoes, steamed 8 minutes in microwave, cooled + cut into wedges
avocado oil spray
1 tsp smoked paprika
1 tsp garlic powder
1 tsp cumin
1 tsp sea salt
couple grinds of pepper

  1. for burgers, mix ground beef, zucchini, olive oil, worcestershire, garlic powder, onion powder, salt + pepper + form into 8 slider patties. grill a couple/few minutes per side, depending on how well done you like them, then remove to a plate.
  2. wrap patties in big iceberg lettuce leaves + top each with a tomato slice.
  3. for the sweet potato fries, mix smoked paprika, garlic powder, cumin, sea salt + pepper together. spray sweet potato wedges with avocado oil + toss with the seasoning mix. place wedges on the grill + grill a couple minutes per side.


dessert:
[grilled cinnamon pineapple a la mode] makes 4 servings

8 pineapple rings
cinnamon
coconut oil spray
coconut milk ice cream
mint leaves for garnish

  1. sprinkle pineapple rings with cinnamon + spray with coconut oil. grill a couple/few minutes per side, until each side has nice grill marks.
  2. serve with coconut milk ice cream + top with mint leaves + more cinnamon.
