cinco de mayo slimmed down: cocktails, mocktails + tacos!

if taco tuesday is like the best day of the week (and it is) then may 5th is like one of the best days of the year - en serio.  chips, guac + margs, what’s not to love?? but with all the revelry and refreshments, it’s easy to overdo it. behold, a few of our cinco de mayo faves, fitlosophyzed - a crazy delicious street taco with none of the usual fattening suspects (we’re lookin’ at YOU, sour cream!) that can be thrown together in just cinco minutos + a slimmed-down cocktail with a kick to wash it down. don’t care to imbibe? try our naturally sweet little mocktail: a fresco watermelon sipper. the best part? these healthy-mex concoctions needn't be reserved for just cinco de mayo - feel free to indulge guilt-free, year round!

now let’s get this fiesta started.

[skinny jalapeño margarita]
serves 1

  • 2 oz jalapeño-infused tequila (we like Tanteo!)
  • juice of 1 lime
  • ½ oz agave
  • splash pineapple juice
  • just a pinch thinly sliced jalapeño (plus more for garnish)
  1. in cocktail shaker (tip: use a protein shaker!), combine all ingredients + shake well.
  2. rim margarita glass with salt.
  3. pour over ice + garnish with lime....sip up!
a bit of surprising good news: our spicy skinny jalapeño margarita is one of the healthiest (and yummiest) cocktail options. not only does the spicy kick from the jalapeño contain capsaicin, which is a natural anti-inflammatory that boosts metabolism, but in moderation tequila has a number of health benefits like lowering cholesterol and blood glucose levels, aiding in digestion, as well as also containing pre- and probiotic properties. bonus: recent research has found that the natural sugars found in tequila called “agavins” (not to be confused with “agave”), are linked to weight loss. so basically, this skinny margarita is not only guilt-free at <100 calories, but it’s literally a healthy libation that you’d be loco not to shake up!

    [watermelon agua fresca]
    serves 1 - 2

    • 1 cup watermelon chunks
    • juice of 1 lime
    • ⅓ cup ice
    • 1 tsp honey
    • mint leaves for garnish
    1. puree watermelon in a blender.
    2. add the lime juice + ice + honey + blend until smooth.
    3. pour into a glass + garnish with mint leaves.

    [chicken street tacos + tomatillo salsa]
    serves 1

    • 3 oz (about ¾ cup) shredded rotisserie chicken
    • 2 small corn tortillas
    • ¼ cup diced white onion
    • ¼ cup cilantro leaves

      • 1 small tomatillo, quartered
      • ½ jalapeño, seeded + coarsely chopped
      • 1 small shallot, coarsely chopped
      • 2 tbsp cilantro leaves
      • juice of 1 lime
      • sea salt to taste
      1. for the salsa, just throw all your ingredients in a mini food processor blender + blend until you reach desired consistency (we like it mostly smooth with just a little chunkiness).
      2. for the tacos, just warm your tortillas in a hot skillet for about 30 seconds or so + then fill ‘em up with chicken + onion + cilantro.
      3. top ‘em off with a little tomatillo salsa + get your taco on!
