let’s all take a brief moment of silence in honor of national pumpkin day, please.

second only to national coffee day, this is a pretty big deal. because not only is this orange-hued sweet squash super-yummy, but it packs a nutritional punch to earn its ranks on the list of top superfoods. beta-carotene for healthy peepers, vitamin k to battle nasty cancer, and fiber to fill your tummy. but don’t skip the seeds: they pack protein, magnesium, potassium + zinc! try my go-to protein-packed pumpkin + spice muffins for a quick + healthy anytime treat. got little gremlins at home? this recipe is super kid-friendly. 


few options to tweak
:
  • not a fan of stevia? sub-in 2 tablespoons raw honey instead.
  • top muffins with raw pumpkin seeds to add some crunch! 
  • choose protein powder with < 5g sugar per scoop.
  • make a few batches ahead, freeze + then grab for an anytime snack.
  • since they’re high protein they’re perfect pre/post-workout, or even for a little nighttime treat to curb cravings!
i’m literally taking mine out of the oven right now. bonus: your home just smells heavenly for hours! perhaps i shall celebrate this healthy halloweenish holiday by pairing it with our fitlosophy-approved punkin’ spiced latte!
