crazy-quick enchies + faux-fried beans


happy cinco de mayo! if you are planning on enjoying a skinny margarita or beer today, why not pair it with this delicious crazy-quick enchies + faux-fried beans recipe?


this quick dish which is a healthified version of my momma’s gringo enchiladas. what are gringo enchiladas you might ask? ground beef enchiladas featuring white flour tortillas, red sauce, and yellow cheese. all foods that real mexicanos eat, hence: gringo. i’ve eaten these since i was a wee one and this recipe still lives on today.  so leave it to me to health-it-up a bit for an equally easy and (lot) healthier version. thanks for the inspiration, momma!  this is a great go-to dish to have on hand for healthy dinners for the week. 

crazy-quick enchies + faux-fried beans
[inspired by my momma's gringo enchiladas]



  • 1 package of small corn tortillas [my fave: la tortilla factory’s hand-made style corn tortillas…they are super soft and don’t break when rolling the enchies! i dig the green chili ones for extra kick].
  • 16 oz shredded white-meat chicken or carnitas [buy the pre-cooked kind at trader joe’s or your local grocer to save time].
  • 1 small can diced green chilis
  • 1/2 red onion, diced
  • 1 cup shredded pepper-jack cheese
  • 8oz red or green chili sauce [any canned kind will do but i use frontera's red chili enchilada sauce most of the time so it looks like momma’s, but every now and then i’ll go green].
  • enchie toppings: shredded baby spinach, non-fat plain greek yogurt, avocado + valentina hot sauce
  • 1 can low-sodium black beans


  1. saute diced green chilis and onion in a skillet for a few minutes, then add shredded meat and stir for a few more minutes until warm.
  2. warm the tortillas in the microwave for about 30 seconds for easy assembly!
  3. spoon about 1/4c meat mixture into each tortilla + sprinkle in shredded pepper-jack cheese…roll up and place in baking pan nicely side by side.
  4. after all of the enchies are in the pan, top with the red or green chili sauce, then sprinkle with the remainder (about 1/2c) of the pepper-jack cheese.
  5. bake enchies at 350 for 10 minutes
  6. while those are baking, add black beans to a skillet over medium-high heat with 1tbsp olive oil + 1tbsp hot sauce [note: try valentina's a better, cheaper version of cholula and they sell it on amazon or most supermarkets!]
  7. wait til beans come to a simmer, and then using a potato masher, mash those beans to make ‘em faux-fried!
  8. remove enchies from the oven, serve yourself one (or two) and top with shredded spinach, avocado + a dollop of greek yogurt – then serve with some of those beans!
