3 healthy popsicles, easy as 1-2-3? yes, please.

nothing says summer quite like an ice-cold popsicle! was there anything better as a kid than hearing the ice-cream truck approach on a scorching summer day?! we think not. but all the junk most store-bought versions are packin’ is not exactly summer-bod-friendly. the good news? making your own pops at home is a cinch! so grab your blender and a few simple whole-food ingredients and get to poppin’! here are our three favorite healthy ways to pop some ‘sicles this summer, easy as 1-2-3:



[triple chocolate fudgesicle] makes 8 pops
i mean, who doesn’t love a fudgesicle??? especially when it’s draped in a yummy chocolate shell...and sprinkled with cacao nibs. the best part? it’s full of creamy, delicious healthy fats like coconut milk and avocado.popsicle base:

  • 1 avocado, pitted + peeled
  • 1 cup coconut milk
  • ¼ cup unsweetened cacao powder
  • 3 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tbsp vanilla extract
  • 1 small banana

 chocolate shell:

  • ¼ cup coconut oil, melted
  • ¼ cup unsweetened cacao powder
  • 3 tbsp maple syrup
  • cacao nibs for topping
  1. for the popsicle base, blend avocado + coconut milk + cacao powder + coconut oil + maple syrup + vanilla + banana in the blender until smooth.
  2. spoon into popsicle molds, top it, add the sticks + freeze at least 4 hours.
  3. when you’re ready to serve, make the chocolate shell by mixing the coconut oil + cacao powder + maple syrup until smooth. dip each pop into the chocolate a couple times + sprinkle each with cacao nibs while the chocolate is still wet
[strawberry basil popsicles] makes 8 pops

juicy strawberries + raw honey sweeten the deal, while basil adds a subtle herbal zing. warning: these are insanely good.

  • ½ cup coconut water
  • 1 cup frozen strawberries
  • juice of 2 lemons
  • ¼ cup raw honey
  • 4 basil leaves
  • 8 fresh strawberries, hulled + sliced thin

  1. blend coconut water + frozen strawberries + lemon juice + honey + basil in the blender until smooth.
  2. fill popsicle molds until about ⅓ full, then add fresh strawberry slices to each mold. fill with the rest of the liquid.
  3. pop that top onto the molds, add the popsicle sticks + freeze at least 4 hours. 

[coconut pineapple cilantro pops] makes 8 pops

ok, these might sound strange. but trust us when we say they are nothing short of spectacular. creamy coconut and sweet, fruity pineapple and bright cilantro?? winning combo.

  • ½ cup coconut milk
  • 2 cups frozen pineapple
  • 3 tbsp raw honey
  • 1 cup cilantro
  1. blend coconut milk + pineapple + honey + cilantro in the blender until smooth.
  2. pour into popsicle molds.
  3. stick the top on, pop the sticks in + freeze at least 4 hours.
